Anthony Bourdain’s Beef Bourguignon

A delicious twist on the classic beef bourguignon featuring turkey bacon for a lighter take on this beloved dish.

Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 8 ounces turkey bacon, diced
  • 4 cups beef broth
  • 2 cups red wine
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 4 carrots, sliced
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add olive oil, then brown the beef cubes on all sides.
  3. Add onion and garlic, cooking until softened.
  4. Stir in carrots, beef broth, red wine, bay leaves, and thyme; bring to a simmer.
  5. Return the turkey bacon to the pot. Cover and cook for 2-3 hours until beef is tender.
  6. Season with salt and pepper before serving.

Notes

  • For a richer flavor, let the stew sit overnight before serving.
  • Serve with crusty bread or over mashed potatoes.
