- 2 large eggplants
- 1/4 cup tahini
- 2 tablespoons olive oil
- 2 cloves garlic
- 2 tablespoons lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon cumin
- 1 tablespoon chopped fresh parsley
- Preheat your oven to 400°F (200°C).
- Slice the eggplants in half and place them cut-side down on a baking sheet.
- Roast for about 30-40 minutes until the skin is wrinkled and the flesh is soft.
- Once cooled, scoop out the flesh and place it in a food processor.
- Add tahini, olive oil, garlic, lemon juice, salt, and cumin to the processor and blend until smooth.
- Transfer to a bowl and drizzle with additional olive oil and sprinkle with parsley before serving.
Notes
- For a smokier flavor, grill the eggplants instead of roasting them.
- Serve with pita bread, crackers, or fresh vegetables.
