Baba Ganoush is a rich and creamy dip ideal for gatherings, made from roasted eggplant and seasoned with tahini, garlic, and lemon.

Ingredients

  • 2 large eggplants
  • 1/4 cup tahini
  • 2 tablespoons olive oil
  • 2 cloves garlic
  • 2 tablespoons lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon cumin
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the eggplants in half and place them cut-side down on a baking sheet.
  3. Roast for about 30-40 minutes until the skin is wrinkled and the flesh is soft.
  4. Once cooled, scoop out the flesh and place it in a food processor.
  5. Add tahini, olive oil, garlic, lemon juice, salt, and cumin to the processor and blend until smooth.
  6. Transfer to a bowl and drizzle with additional olive oil and sprinkle with parsley before serving.

Notes

  • For a smokier flavor, grill the eggplants instead of roasting them.
  • Serve with pita bread, crackers, or fresh vegetables.
