Baba Ganoush is a flavorful and easy-to-make eggplant dip that pairs perfectly with pita bread or vegetable sticks.

Ingredients

  • 2 large eggplants
  • 1/4 cup tahini
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1/2 teaspoon ground cumin
  • Salt to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prick the eggplants with a fork and place them on a baking sheet.
  3. Bake for 30-40 minutes, until the skin is charred and the flesh is soft.
  4. Let the eggplants cool, then scoop out the flesh into a bowl.
  5. Add the tahini, garlic, olive oil, lemon juice, cumin, and salt to the eggplant and mix until smooth.
  6. Transfer to a serving bowl and garnish with fresh parsley.
  7. Serve with pita bread or vegetables.

Notes

  • This dip can be made ahead of time; just store it in the refrigerator.
