Baba Ganoush is a delicious dip made from roasted eggplant, tahini, and spices, perfect for any occasion.

Ingredients

  • 2 medium eggplants
  • 1/4 cup tahini
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1/2 teaspoon ground cumin
  • Salt to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pierce the eggplants with a fork and place them on a baking sheet.
  3. Roast the eggplants in the oven for about 30-40 minutes, until the skin is charred and the flesh is soft.
  4. Let the eggplants cool, then scoop out the flesh and discard the skins.
  5. In a food processor, combine the eggplant flesh, tahini, olive oil, garlic, lemon juice, cumin, and salt.
  6. Blend until smooth and creamy.
  7. Taste and adjust seasoning if necessary.
  8. Transfer to a serving bowl and garnish with fresh parsley.

Notes

  • For a smokier flavor, grill the eggplants instead of roasting them.
  • Serve with pita bread or vegetable sticks.
