  • 4 large russet potatoes
  • 1 cup turkey bacon, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • 2 tablespoons chives, chopped

Instructions

  1. Preheat the oven to 400°F (200°C). Bake the potatoes until tender, about 1 hour.
  2. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  3. In the same pot, add onions and garlic, cooking until softened.
  4. Peel and chop the baked potatoes, then add to the pot with chicken broth.
  5. Bring to a simmer and cook for 15 minutes.
  6. Stir in heavy cream, salt, pepper, and paprika. Blend soup until smooth if desired.
  7. Serve topped with bacon, cheese, sour cream, and chives.
