- 4 large russet potatoes
- 1 cup turkey bacon, chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1 cup shredded cheddar cheese
- 1/4 cup sour cream
- 2 tablespoons chives, chopped
- Preheat the oven to 400°F (200°C). Bake the potatoes until tender, about 1 hour.
- In a large pot, cook the turkey bacon until crispy. Remove and set aside.
