Baked Potato Soup

A deliciously creamy baked potato soup loaded with turkey bacon, perfect for a comforting meal.

  • 4 large russet potatoes
  • 1/2 cup butter
  • 1/2 cup all-purpose flour
  • 4 cups chicken broth
  • 2 cups milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 cup cooked turkey bacon, crumbled
  • 2 green onions, sliced

Instructions

  1. Preheat oven to 400°F (200°C). Bake the potatoes for about 1 hour until soft.
  2. Let the potatoes cool, then peel and chop them.
  3. In a large pot, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes.
  4. Gradually add chicken broth and milk, whisking until smooth.
  5. Add the chopped potatoes, garlic powder, onion powder, salt, and pepper. Simmer for 10 minutes.
  6. Stir in the cheese and sour cream until melted and creamy.
  7. Serve hot, garnished with turkey bacon and green onions.

Notes

  • This soup can be made ahead of time and reheated.
  • For a lighter version, use low-fat milk and cheese.
