  • 2 pounds beef chuck, cut into 1-inch cubes
  • 6 ounces turkey bacon, diced
  • 2 cups carrots, sliced
  • 1 cup onions, chopped
  • 2 cloves garlic, minced
  • 2 cups red wine
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon thyme
  • 1 bay leaf
  • 1 tablespoon olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crisp. Remove and set aside.
  2. In the same pot, sear the beef cubes until browned.
  3. Add onions, carrots, and garlic; sauté until softened.
  4. Stir in tomato paste, thyme, and bay leaf.
  5. Pour in red wine and beef broth, bringing to a simmer.
  6. Return the turkey bacon to the pot and cover.
  7. Cook on low heat for 2-3 hours until beef is tender.
  8. Season with salt and pepper before serving.
