  • 2 pounds beef chuck, cut into 1-inch pieces
  • 4 ounces turkey bacon, diced
  • 1 tablespoon olive oil
  • 2 cups red wine
  • 2 cups beef broth
  • 2 carrots, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 ounces mushrooms, sliced
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. In a large Dutch oven, cook the turkey bacon over medium heat until crispy.
  2. Add the beef and brown on all sides.
  3. Add the carrots, onion, and garlic; sauté for a few minutes.
  4. Stir in the wine, beef broth, tomato paste, bay leaf, thyme, salt, and pepper.
  5. Bring to a simmer, cover, and cook on low heat for about 2 hours.
  6. In the last 30 minutes, add the mushrooms.
  7. Remove the bay leaf before serving and garnish with parsley.

Notes

  • Serve with crusty bread or over mashed potatoes.
  • This dish tastes even better the next day as the flavors meld.
