Beet Salad

A delightful salad featuring roasted beets, crispy turkey bacon, and savory chicken ham.

Ingredients

  • 4 medium beets
  • 4 slices turkey bacon
  • 1 cup chicken ham, diced
  • 2 cups mixed greens
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup walnuts, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wrap beets in foil and roast for 45-60 minutes until tender.
  3. Cook turkey bacon in a skillet until crispy, then chop into pieces.
  4. Once beets are cool, peel and dice them.
  5. In a large bowl, combine mixed greens, diced beets, chicken ham, feta cheese, and walnuts.
  6. In a small bowl, mix olive oil, balsamic vinegar, salt, and pepper to make the dressing.
  7. Pour dressing over the salad and toss gently to combine.
  8. Top with crispy turkey bacon and serve.
