  • 2 cups cooked rice
  • 4 strips turkey bacon
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 eggs
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 2 green onions, chopped

Instructions

  1. In a large skillet, heat the vegetable oil over medium heat.
  2. Add the turkey bacon and cook until crispy. Remove and chop into pieces.
  3. Add the mixed vegetables and sauté for 3-4 minutes.
  4. Push the vegetables to one side of the pan and scramble the eggs on the other side.
  5. Once the eggs are cooked, combine with the vegetables and add the rice.
  6. Stir in the soy sauce and bacon and cook for another 5 minutes, mixing well.
  7. Top with green onions before serving.
