A delicious recipe for smothered chicken and rice featuring turkey bacon.

Ingredients

  • 4 pieces chicken thighs
  • 2 cups rice
  • 4 slices turkey bacon
  • 1 onion chopped
  • 3 cloves garlic minced
  • 4 cups chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 cup frozen peas
  • 2 tablespoons chopped parsley

Instructions

  1. Cook turkey bacon in a skillet over medium heat until crispy. Remove and chop.
  2. In the same skillet, add olive oil and sauté onions and garlic until translucent.
  3. Add chicken and season with salt, pepper, and paprika. Brown on both sides.
  4. Stir in rice and chicken broth. Bring to a boil.
  5. Add frozen peas and cooked bacon, cover, and reduce heat. Simmer until rice is cooked.
  6. Garnish with parsley before serving.
