  • 1 cup Biscoff cookie crumbs
  • 1/2 cup granulated sugar

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, combine Biscoff cookie crumbs and melted butter. Press this mixture into the bottom of a 9-inch springform pan.
  3. In a separate bowl, beat the cream cheese and sugar until smooth. Add in the vanilla extract and Biscoff spread, mixing well.
  4. In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
  5. Pour the cheesecake filling over the crust in the springform pan, smoothing the top.
  6. Bake for 45 minutes or until the center is set. Let it cool, then refrigerate for at least 4 hours before serving.
