- 2 cups all-purpose flour
- 1 ¾ cups granulated sugar
- ¾ cup unsweetened cocoa powder
- 1 ½ teaspoons baking powder
- 1 ½ teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup whole milk
- ½ cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 cup blackberry puree
- Preheat the oven to 350°F (175°C).
- Grease and flour two 9-inch round cake pans.
- In a large bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add the eggs, milk, oil, and vanilla. Beat on medium speed for 2 minutes.
- Stir in boiling water and blackberry puree until well mixed.
- Pour the batter into prepared pans.
- Bake for 30 to 35 minutes or until a toothpick comes out clean.
- Cool for 10 minutes in pans, then transfer to wire racks to cool completely.
- Frost with preferred icing and decorate with fresh blackberries.
Notes
- For an extra gothic touch, use black food coloring in the frosting.
- This cake pairs well with cream cheese icing.
