Blackberry Velvet Gothic Cake

A rich and moist blackberry velvet cake combined with dark chocolate for a gothic twist.

Ingredients

  • 2 cups all-purpose flour
  • 1 ¾ cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup blackberry puree

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. In a large bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  4. Add the eggs, milk, oil, and vanilla. Beat on medium speed for 2 minutes.
  5. Stir in boiling water and blackberry puree until well mixed.
  6. Pour the batter into prepared pans.
  7. Bake for 30 to 35 minutes or until a toothpick comes out clean.
  8. Cool for 10 minutes in pans, then transfer to wire racks to cool completely.
  9. Frost with preferred icing and decorate with fresh blackberries.

Notes

  • For an extra gothic touch, use black food coloring in the frosting.
  • This cake pairs well with cream cheese icing.
