Blueberry Sausage Pancake Casserole

A delightful and simple breakfast option that combines the flavors of blueberry, sausage, and pancakes.

  • 2 cups fresh blueberries
  • 2 cups pancake mix
  • 1 ¾ cups milk
  • 3 large eggs
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Crumble and cook the sausage in a skillet until browned.
  3. In a large bowl, mix the pancake mix, milk, eggs, maple syrup, and vanilla extract.
  4. In a greased baking dish, layer the cooked sausage and fresh blueberries.
  5. Pour the pancake batter over the sausage and blueberries.
  6. Bake for 25-30 minutes or until golden brown.
  7. Allow to cool slightly before serving.
