Ingredients

  • 2 cups broccoli florets
  • 1 cup diced potatoes
  • 1 medium onion, chopped
  • 4 cups vegetable broth
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • 2 tablespoons butter
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt butter over medium heat. Add onions and sauté until translucent.
  2. Add diced potatoes and vegetable broth. Bring to a boil and then simmer until potatoes are tender.
  3. Add broccoli and cook until bright green and tender.
  4. Using an immersion blender, carefully blend the soup until smooth.
  5. Stir in milk, garlic powder, salt, and pepper. Heat through, then add cheese and stir until melted.
