Caramel Apple Cheesecake Bars

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 (8 ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups peeled, chopped apples
  • 1/2 cup caramel sauce
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a medium bowl, combine graham cracker crumbs and melted butter. Press the mixture evenly into the bottom of the prepared dish.
  3. In a large bowl, beat the cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, mixing well after each addition.
  4. Fold in the chopped apples and ground cinnamon.
  5. Pour the cream cheese mixture over the crust in the baking dish.
  6. Drizzle caramel sauce over the top and use a knife to swirl it into the cheesecake mixture.
  7. Bake for 30-35 minutes or until the center is set. Allow to cool completely before slicing into bars.
