  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup mashed bananas (about 2 large bananas)
  • 1 cup grated carrots (about 2 medium carrots)
  • 1/2 cup crushed walnuts (optional)
  • 8 ounces cream cheese, softened
  • 1/4 cup butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a loaf pan.
  2. In a bowl, mix the flour, baking soda, baking powder, cinnamon, and salt.
  3. In another bowl, whisk together the sugars, oil, eggs, and vanilla. Stir in the bananas and carrots.
  4. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the walnuts if using.
  5. Pour the batter into the prepared loaf pan and bake for 55-60 minutes or until a toothpick comes out clean.
  6. While the bread cools, prepare the frosting by beating together the cream cheese, butter, powdered sugar, and vanilla until smooth.
  7. Once the bread is cool, spread the cream cheese frosting on top. Slice and serve.
