These Carrot Cake Energy Balls are a perfect healthy snack that is not only easy to make but also delicious.

Ingredients

  • 1 cup dates, pitted
  • 1 cup rolled oats
  • 1 cup shredded carrots
  • 1/2 cup walnuts, chopped
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 cup almond butter
  • 1/4 cup shredded coconut
  • 1 tbsp maple syrup

Instructions

  1. In a food processor, combine dates, rolled oats, shredded carrots, walnuts, cinnamon, nutmeg, almond butter, shredded coconut, and maple syrup.
  2. Pulse until the mixture is well combined and forms a sticky dough.
  3. Using your hands, roll the mixture into small balls.
  4. Place the energy balls on a baking sheet and refrigerate for at least 30 minutes to set.
  5. Store in an airtight container in the refrigerator for up to one week.

Notes

  • For added flavor, consider adding chocolate chips or raisins.
  • These energy balls can also be rolled in extra shredded coconut for a fun twist.
