2 chicken breasts
2 sweet potatoes
1 tablespoon olive oil
1 teaspoon paprika
1 teaspoon garlic powder
Salt and pepper to taste
2 cups spinach
1/4 cup feta cheese
Instructions
Preheat oven to 400°F (200°C).
Peel and cube sweet potatoes, then toss with olive oil, paprika, garlic powder, salt, and pepper.
Place sweet potatoes on a baking sheet and roast for 25-30 minutes, flipping halfway through.
Season chicken breasts with salt and pepper, then heat a skillet over medium heat and cook the chicken for 6-7 minutes on each side until golden brown and cooked through.
In a bowl, layer roasted sweet potatoes, sliced chicken, fresh spinach, and feta cheese.
