  • 2 sweet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 cups spinach
  • 1/4 cup feta cheese

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Peel and cube sweet potatoes, then toss with olive oil, paprika, garlic powder, salt, and pepper.
  3. Place sweet potatoes on a baking sheet and roast for 25-30 minutes, flipping halfway through.
  4. Season chicken breasts with salt and pepper, then heat a skillet over medium heat and cook the chicken for 6-7 minutes on each side until golden brown and cooked through.
  5. In a bowl, layer roasted sweet potatoes, sliced chicken, fresh spinach, and feta cheese.
