2 cups cooked chicken, shredded
1 cup salsa
1 cup black beans, drained and rinsed
1 cup corn, drained
2 cups cooked rice
1 cup shredded cheese
1 teaspoon cumin
1 teaspoon chili powder
½ teaspoon garlic powder
½ teaspoon onion powder
1 lime, juiced
Instructions
Preheat the oven to 350°F (175°C).
In a large bowl, mix together the chicken, salsa, black beans, corn, rice, half of the cheese, cumin, chili powder, garlic powder, onion powder, and lime juice.
Transfer the mixture to a 9×13 inch baking dish.
Top with the remaining cheese.
Bake for 25-30 minutes, or until the cheese is melted and bubbly.
Let cool for a few minutes before serving.
Notes
For added flavor, top with sour cream and fresh cilantro before serving.
This casserole can be made ahead of time and baked before serving.
