Chicken Burrito Casserole

A delicious and easy-to-make Chicken Burrito Casserole that’s perfect for families!

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup salsa
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, drained
  • 2 cups cooked rice
  • 1 cup shredded cheese
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 lime, juiced

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the chicken, salsa, black beans, corn, rice, half of the cheese, cumin, chili powder, garlic powder, onion powder, and lime juice.
  3. Transfer the mixture to a 9×13 inch baking dish.
  4. Top with the remaining cheese.
  5. Bake for 25-30 minutes, or until the cheese is melted and bubbly.
  6. Let cool for a few minutes before serving.

Notes

  • For added flavor, top with sour cream and fresh cilantro before serving.
  • This casserole can be made ahead of time and baked before serving.
