Chocolate Zucchini Muffins

Ingredients

  • 1 cup grated zucchini
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the grated zucchini, sugar, vegetable oil, eggs, and vanilla extract.
  3. In another bowl, combine the flour, cocoa powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet mixture until just combined.
  5. Fold in the chocolate chips.
  6. Pour the batter into a greased muffin tin.
  7. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  8. Allow to cool before serving.

Notes

  • For a healthier version, you can substitute some of the sugar with applesauce.
  • These muffins freeze well; wrap them individually for convenience.
