  • 1 cup crushed pineapple, drained
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 4 large eggs
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1 cup chopped walnuts (optional)
  • 1 cup shredded coconut (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the grated carrots, crushed pineapple, granulated sugar, brown sugar, and vegetable oil.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet mixture until combined.
  6. Fold in the walnuts and coconut if using.
  7. Pour the batter into a greased cake pan.
  8. Bake for 45-50 minutes, or until a toothpick comes out clean.
  9. Allow to cool before serving.
