  • 2 pounds white fish fillets
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1 lemon (juiced)
  • 2 cloves garlic (minced)
  • 1 onion (chopped)
  • 1 bell pepper (sliced)
  • 1 cup tomatoes (diced)
  • 1/4 cup fresh cilantro (chopped)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix the olive oil, cumin, paprika, cayenne pepper, salt, lemon juice, and garlic.
  3. Place the fish fillets in a baking dish and coat them with the spice mixture.
  4. Spread the chopped onion and sliced bell pepper on top of the fish.
  5. Add the diced tomatoes and sprinkle with cilantro.
  6. Bake for 20-25 minutes until the fish is cooked through.
  7. Serve hot with your choice of sides.
