3 pounds boneless chuck roast
2 tablespoons olive oil
4 cups sliced onions
4 cloves garlic, minced
1 cup beef broth
1 cup dry white wine
2 teaspoons dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons Worcestershire sauce
1 bay leaf
Instructions
Preheat your oven to 300°F (150°C).
In a large Dutch oven, heat the olive oil over medium-high heat. Season the roast with salt and pepper, then sear it until browned on all sides.
Remove the roast and set aside. In the same pot, add the sliced onions and garlic, sautéing until caramelized.
Return the roast to the pot, adding the beef broth, wine, thyme, Worcestershire sauce, and bay leaf.
Cover and transfer to the oven. Cook for about 3-4 hours, or until the meat is fork-tender.
Remove the roast from the oven, let it rest for a few minutes, then slice and serve with the onions and broth.
