Comforting Loaded Baked Potato Soup

  • 4 medium russet potatoes
  • 1/2 cup turkey bacon, chopped
  • 1/2 cup chicken ham, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 2 green onions, chopped

Instructions

  1. Peel and dice the potatoes into small cubes.
  2. In a large pot, heat olive oil over medium heat. Add chopped turkey bacon and cook until crispy.
  3. Add diced chicken ham, onion, and garlic; sauté until the onion is translucent.
  4. Add the diced potatoes and chicken broth; bring to a boil. Reduce heat and simmer until potatoes are tender.
  5. Stir in heavy cream, shredded cheddar cheese, sour cream, salt, black pepper, and paprika. Cook until cheese is melted and soup is heated through.
  6. Serve warm, garnished with chopped green onions.

Notes

  • For a vegetarian version, omit the bacon and ham.
  • Adjust seasoning to taste.
