Comforting Loaded Baked Potato Soup

A warm and hearty soup perfect for any day.

Ingredients

  • 4 large russet potatoes
  • 6 slices turkey bacon
  • 1 medium onion, diced
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • ¼ cup chopped green onions
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. Add diced onion to the pot and sauté until translucent.
  3. Dice the potatoes and add them to the pot along with chicken broth. Bring to a boil and let simmer until the potatoes are tender.
  4. Using a potato masher, mash the potatoes slightly to thicken the soup.
  5. Stir in heavy cream and shredded cheddar cheese until melted and combined.
  6. Season with salt and pepper.
  7. Serve hot, garnished with turkey bacon and green onions.

Notes

  • This soup can be made ahead of time and stored for later.
  • For a vegetarian version, omit the turkey bacon and use vegetable broth.
