- 4 large russet potatoes
- 6 slices turkey bacon
- 1 medium onion, diced
- 3 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- ¼ cup chopped green onions
- Salt to taste
- Pepper to taste
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
- Add diced onion to the pot and sauté until translucent.
- Dice the potatoes and add them to the pot along with chicken broth. Bring to a boil and let simmer until the potatoes are tender.
- Using a potato masher, mash the potatoes slightly to thicken the soup.
- Stir in heavy cream and shredded cheddar cheese until melted and combined.
- Season with salt and pepper.
- Serve hot, garnished with turkey bacon and green onions.
Notes
- This soup can be made ahead of time and stored for later.
- For a vegetarian version, omit the turkey bacon and use vegetable broth.
