Copycat Anthony Bourdain's Beef Bourguignon

A delicious twist on the classic Beef Bourguignon, using turkey bacon for a lighter flavor.

Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 4 strips turkey bacon, diced
  • 1 large onion, chopped
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 2 cups red wine
  • 2 cups beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 pound baby potatoes, halved
  • 8 ounces mushrooms, sliced

Instructions

  1. In a large pot, heat olive oil and add turkey bacon. Cook until crispy.
  2. Remove bacon and add beef cubes to the pot. Brown on all sides.
  3. Add onions, carrots, and garlic. Sauté until soft.
  4. Stir in red wine, beef broth, tomato paste, thyme, and bay leaf. Bring to a simmer.
  5. Return bacon to the pot, add potatoes and mushrooms.
  6. Cover and cook on low for 2-3 hours until beef is tender.
  7. Season with salt and pepper before serving.

Notes

  • Serve with crusty bread or over mashed potatoes for added flavor.
