  • 1 medium onion, diced

  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped turkey bacon and cook until crispy.
  3. Stir in the onions and garlic, cooking until the onions are translucent.
  4. Add the mushrooms and thyme, cooking until mushrooms are soft.
  5. Pour in the vegetable broth and bring to a boil.
