Creamy Lasagna Soup

  • 1 pound ground beef
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups beef broth
  • 12 ounces lasagna noodles, broken
  • 15 ounces ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat.
  2. Add the diced onion and minced garlic to the pot and sauté until the onion is translucent.
  3. Stir in the crushed tomatoes, beef broth, broken lasagna noodles, and Italian seasoning. Bring to a boil.
  4. Reduce heat and simmer for about 20 minutes or until the noodles are tender.
  5. Stir in the ricotta and half of the mozzarella cheese until melted and creamy.
  6. Season with salt and pepper to taste. Serve hot, garnished with the remaining mozzarella and fresh basil.
