Ingredients

  • 1 cup lentils
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 1 tablespoon soy sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1/2 cup coconut milk
  • 2 tablespoons nutritional yeast
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion and garlic, and sauté until fragrant.
  3. Stir in the mushrooms and cook until softened.
  4. Add the lentils, vegetable broth, soy sauce, thyme, and paprika.
  5. Bring to a boil, then reduce heat and simmer until lentils are tender.
  6. Stir in coconut milk and nutritional yeast, cooking until heated through.
  7. Season with salt and pepper to taste before serving.

Notes

  • For a gluten-free version, use gluten-free soy sauce.
