Crock Pot Birria Tacos

A delicious and easy recipe for making Birria Tacos in a slow cooker.

  • 2 pounds beef chuck roast
  • 2 cups beef broth
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 3 dried guajillo chiles
  • 2 dried ancho chiles
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 2 bay leaves
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 10 corn tortillas
  • 1 cup chopped cilantro
  • 1 lime, cut into wedges

Instructions

  1. Soak the dried chiles in hot water for about 15 minutes.
  2. Blend the soaked chiles with garlic, onion, cumin, oregano, salt, and pepper until smooth.
  3. In the crock pot, add the beef chuck roast, pour the blended sauce over it, and add beef broth and bay leaves.
  4. Cook on low for 8 hours or until the meat is tender.
  5. Shred the meat and serve in corn tortillas topped with cilantro and lime.

Notes

  • For extra flavor, sear the beef chuck roast before adding it to the crock pot.
  • Let the meat sit in the sauce for a few minutes after cooking for enhanced flavor.
