- 2 pounds beef chuck roast
- 2 cups beef broth
- 1 onion, chopped
- 4 cloves garlic, minced
- 3 dried guajillo chiles
- 2 dried ancho chiles
- 1 tablespoon ground cumin
- 1 tablespoon dried oregano
- 2 bay leaves
- 1 teaspoon salt
- 1 teaspoon black pepper
- 10 corn tortillas
- 1 cup chopped cilantro
- 1 lime, cut into wedges
- Soak the dried chiles in hot water for about 15 minutes.
- Blend the soaked chiles with garlic, onion, cumin, oregano, salt, and pepper until smooth.
- In the crock pot, add the beef chuck roast, pour the blended sauce over it, and add beef broth and bay leaves.
- Cook on low for 8 hours or until the meat is tender.
- Shred the meat and serve in corn tortillas topped with cilantro and lime.

- For extra flavor, sear the beef chuck roast before adding it to the crock pot.
- Let the meat sit in the sauce for a few minutes after cooking for enhanced flavor.
