A comforting and indulgent crock pot potato soup packed with the flavors of turkey bacon and creamy potatoes.

Ingredients

  • 6 cups diced potatoes
  • 4 slices turkey bacon, cooked and crumbled
  • 1 cup onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 cup shredded cheese (cheddar or your choice)

Instructions

  1. In a crock pot, combine the diced potatoes, turkey bacon, onion, garlic, and chicken broth.
  2. Cover and cook on low for 7-8 hours or high for 4 hours, until potatoes are tender.
  3. Add the heavy cream, salt, pepper, and paprika. Stir to combine.
  4. Let it cook for an additional 30 minutes on low.
  5. Before serving, stir in the shredded cheese until melted.

Notes

  • For a creamy texture, mash some of the potatoes against the side of the crock pot.
  • Top with extra bacon and cheese for serving.
