Crockpot Loaded Baked Potato Soup

A delicious and healthy version of loaded baked potato soup made in a crockpot with turkey bacon for added flavor.

Ingredients

  • 4 large potatoes, peeled and diced
  • 1 cup turkey bacon, chopped
  • 1 cup onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • 2 teaspoons salt
  • 1 teaspoon black pepper

Instructions

  1. In the crockpot, combine the potatoes, turkey bacon, onion, garlic, and chicken broth.
  2. Cook on low for 6-8 hours or until the potatoes are tender.
  3. Stir in the milk, cheddar cheese, sour cream, salt, and pepper.
  4. Cook for an additional 30 minutes on low, until the cheese is melted and the soup is heated through.
