Crockpot Loaded Baked Potato Soup

  • 6 large russet potatoes
  • 1 cup turkey bacon, cooked and crumbled
  • 1 cup chicken ham, diced
  • 1 cup sour cream
  • 4 cups chicken broth
  • 1 cup shredded cheddar cheese
  • 1/2 cup green onions, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Peel and chop the potatoes into small cubes.
  2. In a Crockpot, combine potatoes, turkey bacon, chicken ham, and chicken broth.
  3. Cook on low for 6-8 hours or until potatoes are tender.
  4. Stir in sour cream, garlic powder, onion powder, and season with salt and pepper.
  5. Before serving, stir in shredded cheese and top with green onions.

Notes

  • For a thicker soup, mash some of the potatoes before serving.
