4 cups potatoes, diced
2 cups broccoli florets
1 cup shredded cheddar cheese
1 cup onion, chopped
4 cups vegetable broth
1 cup heavy cream
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon paprika
Instructions
Place potatoes, broccoli, onion, garlic, salt, black pepper, and paprika in the crockpot.
Pour vegetable broth over the ingredients.
Cook on low for 6-8 hours or high for 3-4 hours until vegetables are tender.
Stir in heavy cream and shredded cheddar cheese until melted and smooth.
