Crockpot Potato Soup

Ingredients

  • 6 cups diced potatoes
  • 1 cup turkey bacon, cooked and crumbled
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Place diced potatoes, turkey bacon, onion, and garlic in the crockpot.
  2. Pour in chicken broth and add salt, pepper, and thyme.
  3. Cook on low for 6-8 hours or high for 3-4 hours.
  4. Stir in heavy cream and cheese before serving.

Notes

  • For a thicker soup, use an immersion blender to blend some of the potatoes.
  • Garnish with additional cheese and green onions if desired.
