Crockpot Potato Soup

  • 4 large potatoes, peeled and diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 slices turkey bacon, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme
  • 1 cup cheddar cheese, shredded

Instructions

  1. In a crockpot, combine the potatoes, onion, garlic, and turkey bacon.
  2. Add the chicken broth, salt, pepper, and thyme.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  4. Once cooked, add the heavy cream and cheese, and stir until melted.

  • For a vegetarian version, omit turkey bacon and replace chicken broth with vegetable broth.
