Crunchy Thai Chickpea Salad

A refreshing and healthy salad that combines crunchy vegetables and protein-packed chickpeas, dressed in a tangy Thai dressing.

Ingredients

  • 1 can chickpeas, rinsed and drained
  • 1 cup red bell pepper, diced
  • 1 cup cucumber, diced
  • 1 cup carrots, grated
  • 1/2 cup green onions, sliced
  • 1/4 cup cilantro, chopped
  • 1/4 cup peanuts, chopped
  • 1/4 cup lime juice
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced

Instructions

  1. In a large bowl, combine chickpeas, red bell pepper, cucumber, carrots, green onions, cilantro, and peanuts.
  2. In a separate bowl, whisk together lime juice, soy sauce, sesame oil, honey, garlic, and ginger.
  3. Pour the dressing over the salad and mix well to combine.
  4. Serve chilled or at room temperature.

Notes

  • For a spicier kick, add sliced jalapeños to the salad.
