Cucumber Carrot Salad

A light and refreshing salad that brings out the best of summer with crunchy cucumbers and carrots.

Ingredients

  • 2 cucumbers, thinly sliced
  • 3 carrots, grated
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon honey (optional)
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cucumbers, carrots, red onion, and parsley.
  2. In a small bowl, whisk together the olive oil, apple cider vinegar, and honey.
  3. Pour the dressing over the salad and toss to combine.
  4. Season with salt and pepper to taste.
  5. Let the salad rest for 10 minutes before serving to allow flavors to meld.

Notes

  • This salad can be made a few hours ahead of time, just keep it covered in the refrigerator.
