Delicious Eggs in Purgatory

A mouthwatering dish featuring eggs poached in a spiced tomato sauce, complemented by turkey bacon and chicken ham.

Ingredients

  • 4 large eggs
  • 1 cup tomato sauce
  • 4 slices turkey bacon
  • 2 slices chicken ham
  • 1 tablespoon olive oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon red pepper flakes
  • Salt to taste
  • Ground black pepper to taste
  • Fresh basil for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add minced garlic and sauté until fragrant.
  3. Stir in the tomato sauce and red pepper flakes, and let it simmer for 5 minutes.
  4. Make four small wells in the sauce and crack an egg into each well.
  5. Cover the skillet and cook for 5-7 minutes until the eggs are set.
  6. Meanwhile, cook the turkey bacon and chicken ham in another pan until crispy.
  7. Serve the eggs topped with turkey bacon and chicken ham, and garnish with fresh basil.

Notes

  • This dish can be served with crusty bread for dipping.
  • Feel free to adjust the spiciness by adding more or less red pepper flakes.
