Ditalini Pasta Salad

A delicious ditalini pasta salad featuring turkey bacon, perfect for a quick meal or side dish.

Ingredients

  • 8 ounces ditalini pasta
  • 4 strips turkey bacon
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Cook ditalini pasta according to package instructions. Drain and set aside.
  2. In a skillet, cook turkey bacon until crispy. Remove from heat and chop.
  3. In a large bowl, combine pasta, turkey bacon, cherry tomatoes, cucumber, red onion, and parsley.
  4. In a small bowl, whisk together olive oil, red wine vinegar, salt, and pepper.
  5. Pour dressing over the salad and toss to combine.
  6. Chill in the refrigerator for at least 30 minutes before serving.
