- 2 cups cooked chicken, shredded
- 1 cup tzatziki sauce
- 1 cup uncooked rice
- 3 cups chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 cup feta cheese, crumbled
- 1/2 cup cherry tomatoes, halved
- 1 tablespoon olive oil
- salt and pepper to taste
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine shredded chicken, tzatziki sauce, uncooked rice, chicken broth, garlic powder, and oregano.
- Pour the mixture into a greased baking dish.
- Top with crumbled feta cheese and halved cherry tomatoes.
- Drizzle with olive oil and season with salt and pepper.
- Cover with foil and bake for 45 minutes.
- Remove foil and bake for an additional 15 minutes, or until rice is tender and liquid has absorbed.
- Allow to cool for a few minutes before serving.
Notes
- This casserole is best served fresh but can be stored in the refrigerator for up to 3 days.
- For added flavor, you can mix in some fresh herbs like dill or parsley.
