Dump-and-Bake Chicken Tzatziki Casserole

A delicious and easy weeknight meal that brings a taste of Greece to your table.

  • 2 cups cooked chicken, shredded
  • 1 cup tzatziki sauce
  • 1 cup uncooked rice
  • 3 cups chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 cup feta cheese, crumbled
  • 1/2 cup cherry tomatoes, halved
  • 1 tablespoon olive oil
  • salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine shredded chicken, tzatziki sauce, uncooked rice, chicken broth, garlic powder, and oregano.
  3. Pour the mixture into a greased baking dish.
  4. Top with crumbled feta cheese and halved cherry tomatoes.
  5. Drizzle with olive oil and season with salt and pepper.
  6. Cover with foil and bake for 45 minutes.
  7. Remove foil and bake for an additional 15 minutes, or until rice is tender and liquid has absorbed.
  8. Allow to cool for a few minutes before serving.

Notes

  • This casserole is best served fresh but can be stored in the refrigerator for up to 3 days.
  • For added flavor, you can mix in some fresh herbs like dill or parsley.
