Easy Baked Potato Soup

A creamy and hearty baked potato soup enriched with turkey bacon for a delicious twist on comfort food.

Ingredients

  • 4 large russet potatoes
  • 1/2 cup turkey bacon, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • 1/4 cup green onions, sliced

Instructions

  1. Peel and dice the potatoes.
  2. In a large pot, cook the turkey bacon until crispy, then remove it from the pot.
  3. Add onion and garlic to the pot and sauté until translucent.
  4. Add the diced potatoes and chicken broth; bring to a boil.
  5. Reduce heat and simmer until potatoes are tender.
  6. Puree the soup partially with an immersion blender or regular blender, leaving some chunks.
  7. Stir in milk, salt, and pepper; heat through.
  8. Serve hot, topped with cheddar cheese, sour cream, green onions, and the crispy turkey bacon.

Notes

  • For a vegetarian version, omit the turkey bacon and use vegetable broth.
  • Top with additional bacon and cheese for more indulgence.
