  • 2 cups cooked rice
  • 3 eggs
  • 4 slices turkey bacon
  • 1 cup frozen peas and carrots
  • 3 tablespoons soy sauce
  • 2 tablespoons green onions, chopped
  • 1 tablespoon sesame oil

Instructions

  1. In a pan, cook turkey bacon until crispy, then chop it into small pieces.
  2. In the same pan, add sesame oil and sauté peas and carrots for a few minutes.
  3. Add in the cooked rice and mix well with the vegetables.
  4. Push the rice to the side of the pan and crack the eggs into the empty side, scrambling them.
  5. Once the eggs are cooked, combine them with the rice and vegetables.
  6. Add the chopped turkey bacon and soy sauce, stirring everything together.
  7. Top with chopped green onions before serving.

Notes

  • Use day-old rice for best results.
  • Feel free to add other vegetables like bell peppers or corn.
