Easy Gingerbread Tiramisu

A delicious and comforting twist on the classic tiramisu that brings the warm flavors of gingerbread to your table.

  • 1 cup brewed coffee
  • 2 tablespoons coffee liqueur
  • 1 package gingerbread cookies
  • 8 ounces mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Paleo-friendly sugar alternative (optional)

Instructions

  1. Prepare the coffee and mix it with the coffee liqueur in a shallow dish.
  2. Dip each gingerbread cookie in the coffee mixture briefly and layer it at the bottom of the serving dish.
  3. In a large bowl, whisk together the mascarpone cheese, heavy cream, powdered sugar, vanilla extract, and spices until smooth and creamy.
  4. Spread half of the mascarpone mixture over the layer of cookies.
  5. Repeat the process with another layer of dipped gingerbread cookies and the remaining mascarpone mixture.
  6. Chill the tiramisu in the refrigerator for at least 4 hours or overnight.
  7. Before serving, dust the top with additional ground spices if desired.

Notes

  • This dessert is best prepared a day in advance to allow the flavors to meld.
