A delicious and easy-to-make enchilada casserole recipe featuring turkey bacon.

  • 1 pound ground turkey
  • 6 slices turkey bacon
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (10 ounces) enchilada sauce
  • 2 cups shredded cheese
  • 1 cup corn
  • 8 corn tortillas
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the turkey bacon in a skillet until crispy, then crumble it.
  3. In the same skillet, brown the ground turkey until cooked through.
  4. Add the black beans, enchilada sauce, cheese, corn, chili powder, cumin, and salt. Mix well.
  5. In a baking dish, layer tortillas with the turkey mixture and top with remaining cheese.
  6. Bake for 25-30 minutes until bubbly.

Notes

  • For extra flavor, add diced onions and bell peppers when browning the turkey.
  • Top with avocado or sour cream before serving.
