Fall Apple Cider Stew Mash

A delicious fall-inspired stew featuring turkey bacon and chicken ham, enriched with the flavors of apple cider.

Ingredients

  • 4 cups apple cider
  • 2 pounds boneless chicken ham
  • 8 ounces turkey bacon
  • 2 cups chopped carrots
  • 2 cups diced potatoes
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 teaspoons dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add chopped onion and garlic, sautéing until softened.
  3. Add the chicken ham, carrots, and potatoes. Stir to combine.
  4. Pour in the apple cider and add thyme, salt, and pepper. Bring to a boil.
  5. Reduce heat and simmer for 30 minutes until veggies are tender.
  6. Chop the cooked bacon and stir it back into the stew before serving.

Notes

  • For a thicker stew, mash some of the potatoes.
  • Feel free to add your favorite seasonal vegetables.
