French Beef Stew

A hearty and satisfying French Beef Stew made delightful with turkey bacon.

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 4 strips turkey bacon, chopped
  • 1 onion, diced
  • 3 carrots, sliced
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt and black pepper to taste
  • 3 tablespoons olive oil
  • 2 tablespoons flour

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add turkey bacon and cook until crispy, then remove and set aside.
  3. In the same pot, add the beef cubes and brown them on all sides.
  4. Add onions, carrots, and garlic; sauté until softened.
  5. Sprinkle flour over the mixture, stirring for a minute.
  6. Add red wine, beef broth, tomato paste, thyme, and bay leaves.
  7. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours, until beef is tender.
  8. Stir in the cooked turkey bacon before serving.

Notes

  • This stew can be prepared a day ahead for better flavor.
  • Adjust seasoning to personal preference.
