French Beef Stew

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups carrots, sliced
  • 2 cups potatoes, diced
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add beef and brown on all sides.
  2. Add onion and garlic, and sauté until softened.
  3. Pour in beef broth and bring to a boil.
  4. Add carrots, potatoes, thyme, and bay leaf. Season with salt and pepper.
  5. Reduce heat, cover, and simmer for 1.5 to 2 hours, until beef is tender.
  6. Discard bay leaf and serve hot.
