- 1 pound chicken thighs
- 6 slices turkey bacon
- 1 cup onions, chopped
- 2 cups mushrooms, sliced
- 1 cup chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups broccoli florets
- 1 cup cheddar cheese, shredded
- Preheat the oven to 375°F (190°C).
- In a large skillet, cook the turkey bacon until crispy. Remove and set aside.
- In the same skillet, add chopped onions and mushrooms, sauté until tender.
- Add chicken thighs, broth, spices, and bring to a simmer.
- Transfer to a casserole dish, add broccoli and crumbled turkey bacon.
- Top with shredded cheese and bake for 25-30 minutes.
